What is a Pizzelle?

A pizzelle is a classic Italian cookie that is made in a special pizzelle press.

The press creates a festive pattern reminiscent of a snowflake.

The cookies are thin, crisp, and not too sweet.

Make a big batch of pizzelles before holiday gatherings or for a cookie exchange!

They’re a taste of Italy. For another traditional italian cookie, you might like Pignoli cookies.

Equipment Needed for Pizzelle Cookies

Before you start making this lemon pizzelle recipe, make sure you have all the required equipment.

  • Pizzelle Maker: A special pizzelle iron is needed to make these cookies. We use a non-stick electric pizzelle maker, which is a great option because it doesn’t require you to use vegetable oil cooking spray for each batch.
  • Mixer: A stand mixer or hand mixer will ensure your pizzelle batter is the perfect consistency.
  • Cooling Rack: The pizzelles only get crisp after cooling so it’s important to immediately place the cookies on a cooling rack after removing them from the pizzelle iron. A multirack cooling rack is a great kitchen accessory to have on hand when making pizzelles.
  • Mesh Sieve: Pizzelles are often served with powdered sugar on top. For a perfect sprinkle, use a mesh sieve filled with powdered sugar and tap the sides of the sieve for a light dusting.
  • Microplane: Invest in a high quality microplane zester and grater to easily zest lemons for your citrus pizzelles.
  • Cookie Scoop: A small cookie scoop helps you to place dollops of batter into the center of the waffle maker without it getting stuck on the spoon.

Pizzelle Cookie Flavor Options

While this recipe focuses on our lemon pizzelle recipe, there are a number of different flavors you can make with a pizzelle maker.

  • Classic Pizzelles: A classic pizzelle recipe is a simple, yet scrumptious cookie that is flavored with pure vanilla extract and uses an anise extract that creates a flavor that is similar to black licorice.
  • Lemon Pizzelles: This is the flavor that we created for our recipe. We omitted the anise and vanilla and used both meyer lemon zest and fresh lemon juice to create a bright, citrus cookie. You could also substitute lemon for orange zest.
  • Chocolate Pizzelles: Omit the vanilla and anise and add in cocoa powder. Add a few more tablespoons of sugar and you have a sweet, chocolatey pizzelle.
  • Almond Pizzelles: Swap out the vanilla and anise extracts for almond extract or amaretto. Then add more almond flavor by mixing in a cup of ground almonds to the batter.

How to Keep Pizzelle Cookies Crisp

Right when you remove the hot cookies from the waffle iron, place the cookies on a cooling rack.

Avoid stacking the cookies on top of each other in order to get truly crispy cookies.

If you don’t have a multirack cooling rack this will likely require multiple cooling racks. You can also use oven grates as makeshift cooling racks.

Other Ways to Use a Pizzelle Machine

The fun doesn’t stop at traditional pizzelles! Here are other ways to use to pizzelle maker:

  • Ice Cream Cones: Roll a hot pizzelle into a cone shape and let cool. Stuff the bottom with a piece of chocolate or a mini marshmallow (use our Homemade Marshmallow Recipe) then use it as a fresh, homemade ice cream cone.
  • Sundae Bowls: Shape the warm pizzelles over a small upside down bowl and let cool to create a cookie bowl for ice cream, pudding, or yogurt with fresh fruit. These would be a great addition to an Ice Cream Sundae Party.
  • Cannolis: Wrap a hot pizzelle around a rolling pin or dowel, let cool and remove. Fill the cylinder with cannoli pastry cream or other fillings.
  • Stroopwaffles: Add a layer of caramel, jam, or lemon curd between two pizzelles and place on top of a hot cup of coffee or tea for a variation on a dutch stroopwaffle.
  • Ice Cream Sandwiches: Add softened ice cream between two pizzelles for an ice cream sandwich.

FAQs

Why are my pizzelles not crispy? ›

Pizzelles should be crunchy! They're a thin, light, crispy cookie. If your pizelles are soft, it means they have absorbed moisture from the air or they weren't cooked enough.

What is the official flavor of Italian pizzelle? ›

Although Anise (Black licorice) is the “traditional” flavor of the pizzelle, modern options include vanilla, peppermint, anisette, lemon and chocolate but there are countless recipes and flavor combinations for this humble Italian cookie.

Is pizzelle batter supposed to be thick? ›

Pizzelle batter is very thick and sticky, so it can be hard to transfer off of a spoon onto a waffle maker. Instead, pipe the batter in a swirl with a large open tip (Wilton 1A) so it fills the whole section when pressed.

What does pizzelle mean in Italian? ›

A Crispy History

Pizzelles, the oldest known waffle cookies, originated in Italy. The name pizzelle is based on the Italian word 'pizze' meaning round and flat, with the ending 'elle' referring to its small size.

How can I crisp up my pizzelles? ›

If you have access to an oven, preheat it to 300 degrees. Stack the cookies on a sheet pan and place in the oven, then turn the oven off. Let cookies remain in warm oven for an hour or longer to dry out. This should help return some of the crispiness to the pizzelles.

Should I spray my pizzelle maker? ›

Oil - it could very well be that modern pizzelle makers are so "nonstick" that you do not need to use any cooking spray. Am noting here that when you research recipes, you may encounter a debate about whether or not to use oil or butter. For years our family uses a light spray of cooking oil as needed - it's just fine.

Why are my pizzelles sticking to the pizzelle maker? ›

A: Did you coat the pizzele maker with oil before starting to make a batch? That's the first thing you must do each time. Put a little oil on it, wipe up the excess and heat it up!

Do you grease a pizzelle iron? ›

Heat your pizzelle maker, grease it with a little olive oil and add a generous spoon of your batter. Remove the excess batter with a fork (and remember like Nonna to always clean the stove when you finish!). Lay the cooked pizzelle on the table as they will dry faster.

Is butter or margarine better for pizzelles? ›

As far as the fat used in pizzelle, some recipes will call for oil, others margarine, lard or Crisco. But having tried other fats, I always return to unsalted butter. They crisp up nicely, don't have an oily aftertaste, and cook to perfection in their special pizzelle press.

What is another name for pizzelle? ›

Pizzelle are also known as ferratelle or nevole in some parts of Abruzzo, as ferratelle in Lazio, and as ferratelle, cancelle, or pizzelle in Molise. The cookie dough or batter is put into a pizzelle iron, which resembles a small variant of the popular waffle iron.

Why are my cookies crispy instead of soft? ›

Adding too little flour can cause cookies to be flat, greasy, and crispy. Most recipes assume you'll use all-purpose, but if you want a lighter, crumblier cookie texture, choose one with a lower protein content such as cake-and-pastry flour. Baking soda helps cookies spread outward and upward while cooking.

Why don't my cookies come out crispy? ›

To make cookies crispy, add less liquid or bake it in the oven for longer to dry out the dough. Generally bake around 13-15min at 180C for a crispy cookie. But if you want a thoroughly crispy cookie – not those just charred on the outside – decrease the temperature to 140C and bake for 30min.

Why are my cookies chewy and not crispy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

Why do my cookies not stay crispy? ›

Summer, though welcomed for the sun and fun, also brings humidity that makes your cookies limp -- not so fun. Keep those cookies crisp by storing them in an airtight container. Some people toss a piece of bread in with the cookies to help absorb any excess moisture.
